Potato Soup from the Thermomix
A classic potato soup made entirely in the mixing bowl: chop the vegetables, sweat them, cook until soft, then blend to whatever texture you like. For a chunkier soup, simply blend for less time. Floury potatoes give the best body, and the celeriac is what stops it tasting flat.

Ingredients
- 1 onion, halved
- 1 clove of garlic
- 1 carrot (approx. 80 g), in pieces
- 1 piece of celeriac (approx. 80 g), in pieces
- 20 g butter
- 600 g floury potatoes, peeled and in pieces
- 700 g vegetable stock
- 1 bay leaf
- 100 g cream
- Salt and pepper, to taste
- 1 pinch of nutmeg
- 1 bunch of parsley, chopped
Preparation in the Thermomix

Place the onion, garlic, carrot and celeriac in the mixing bowl and chop 5 sec/speed 5. Scrape down with the spatula.

Add the butter and sweat 3 min/120°C/speed 1.

Add the potatoes, vegetable stock and bay leaf and cook 20 min/100°C/reverse/speed 1.

Remove the bay leaf. Add the cream and blend 30 sec/speed 6. For a chunkier soup, blend only 10 sec/speed 4.

Season with salt, pepper and nutmeg and mix 10 sec/speed 3.

Serve sprinkled with the chopped parsley.
